Recipe of the Week

This week's recipe is rich, creamy and delicious! I made them for the Wounded Warriors program and only saved one for myself to try. I'm so glad I didn't have the entire pan sitting around or they would have all been eaten by me in no time!

Chocolate Chip Cheesecake Bars

Ingredients:
1 c. flour
1/3 c. firmly packed light brown sugar
1/4 c. butter, softened
3 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
3 large eggs
1/3 c. sour cream
1/2 tsp. vanilla extract
1 (12 oz. pkg.) mini chocolate chips, divided

1. Beat first 3 ingredients at medium-low speed with electric mixer until combined. Increase speed to medium and beat until well blended and crumbly.
2. Pat into lightly greased 13x9 inch pan lined with aluminum foil and bake at 350º for 13-15 mins.
3. Beat cream cheese on medium until creamy.
4. Gradually add sugar, beating until well blended.
5. Add eggs, one at a time, beating at low speed until just blended.
6. Add sour cream, vanilla, and 1 c. chocolate chips, beating until just blended.
7. Pour over baked crust and bake at 350º for 25 mins or until set. Cool on wire rack.
8. Microwave remaining chocolate chips on high for 1 minute or until smooth, stirring after 30 seconds. Cool slightly then drizzle over cheesecake.
9. Cover and chill at least four hours.
10. Cut into bars and ENJOY!

Hi! I'm new to your blog and I must say, "Finally!" another milspouse willing to admit to loving coffee! I am not a connoisseur, just addicted! So, you will motivate me to approach coffee the same way as wine! Try new ones! Right now, my coffee of choice is Yuban with 2 sweet and lows and 2% milk made with my Kuerig! I am also addicted to iced coffee!

This recipe look yummy! What a wonderful gesture to make towards wounded warriors, instead of gobbling them up all by your lonesome!

We are currently stationed in South Korea, so I am happy to read blogs by other spouses living abroad and enjoying traveling.
